Smoothie : Beat the Heat
I love(ed) a good, fresh, tart margarita - nothing like one on the rocks with salt to beat the summer heat. So what does one do now that she has said adios to the quintessential summer drink? I make this smoothie - a take on a margarita but brimming to the non-salted rim with healthy benefits!

This is not new news - its either you do or you don't for your own health experience. I chose first because I was leaning on it to relax (funny coming from a yoga & meditation teacher/practitioner!) and second to help reduce inflammation in my body.
I had to make a clear choice and put my stake in the ground and be good with that - and I was. It was my choice to do. And guess what - it was totally fine and there are many noticeable differences. My husband was right on board and noticed healthful changes as well. We are also saving $$ on alcohol so we can buy extra frozen fruit for the yummy smoothie I am about to share with you!
In a high-speed blender blend the following. Add water as needed to reach desired consistency.
Makes 2 (you can share or save one in a thermos in refer for later!)
Use organic / local ingredients whenever possible
2 cups of coconut water
2 cups of de-stemmed kale / spinach (I love using "baby" versions of these)
2 cups of fresh/frozen mango chopped
1 cup fresh/frozen pineapple chopped
4 tblsp of lime juice
2 tsp of fresh ginger peeled & chopped
Ice cubes if desired to make a frozen version
